Is T-Mobile’s 5G stable enough for video editing and streaming on an i7 laptop?

That ultimately depends on the area you will be doing so in. It should as long as you aren't expecting to stream at 4k 120Hz, but you definitely should try it out where you are first to see. Especially during peak times.
