How are AI features in smartphones helping with customization and personalization?

AI is the next level of data mining.  It has its advantages and disadvantages.  Personally, I have stripped all of the AI features out of my s23 Ultra and Pixel 9 Pro because I don't need or want them.  

For those that do.  Quick Access to many tools that can quickly summarize their texts, emails, and other communications can save people time.  Quick Access to information sources via text or voice commands instead of having to go to a site to search for something can make that feel more user friendly for heavy search users.  It can better automate speech to text with a better understanding of what you are trying to communicate and even revise or write something for you.  Those are just a few of the very on uses.
