Are you a Tmobile customer and is the phone paid off? If so according to the unlock requirements posted in the link below the phone will automatically unlock and you will get a text message letting you know. That's how I found out my Pixel 6 was unlocked after 40 days.

Listen I thought the same thing and I wasted weeks and weeks combing the Web and watching YouTube videos, I tried everything and nothing would make it even appear let alone show up grayed out. And then I realized the same thing as you did Since the phone wasn't paid off they They hadn't authorized it to appear. Then I tried a few cracked programs I had Downloaded off the Web And OEM unlocked it,as Well as the boot loader In about 5 minutes, And rooted it the same night. There's nothing to it, Try TFT unlocker, It works good and it's fast, You don't have to pay off anything,that's just a myth they tell you to keep you from digging any farther.
