Safe to Update to Android 12 OnePlus 9 5G?

I have never used Microsoft InTune so I don't know. Personally, I would say stick with 11. However, some people seem to like the mashup code mess that the Oxygen and Color OS code merge has brought. To each their own though. In terms of stability and reliability, I would suggest staying on Android 11 until the update to Android 13 is available for your device.
