New phone, new plan
If I buy an iPhone 16 directly from Apple will I have to change my current plan with tMobile? I'd like everything to stay the same except that we have newer phones. Also, if only one of us upgrades will this change anything with tMobile?

If you buy an iPhone 16 directly from Apple, you won't necessarily have to change your current plan with T-Mobile. You can simply insert the T-Mobile SIM card into your new iPhone 16 to keep your existing plan and number. If only one of you upgrades to the iPhone 16, it shouldn't change anything with T-Mobile as long as the new phone is compatible with T-Mobile's network . You can check compatibility by entering the IMEl number of the new phone on T-Mobile's website.

Buying a device from the manufacturer usually has no impact on your account.
If the type of upgrade you do through Apple is through T-Mobile, it can depending on the peomo and eligibility unless you pay in full for the device. EIP's, promos. And other offers are all subject to whatever the terms of them are.
If you just walk into an Apple Store, buy a phone and finance it directly through Apple or pay it in full. Nothing with your T-Mobile account changes. They can migrate your eSIM to the new device and you continue to enjoy things the way they are.
