If someone has stolen old sim card, what information can they see? Can they get into apps or other things without signing in?

It depends. Mostly, depending on how new or old a pSIM is. It will contain your MSISDN (your full mobile number including area code and country code), ICCID (the SIM identifier number), and IMSI (assigned to your SIM by your carrier).
An eSIM can contain a lot more information, including your name, account number, and address on top of what is needed for the SIM to connect to the network.
