Bought an unlocked Samsung Galaxy S20+ 5G, and have no option for Delivered, Read, or Typing in Messages. Can I flash T-Mobile firmware to it in an attempt tto get this feature back?

Samsung Messages has been discontinued in North America. It was more than likely an update that removed the ootion. Even if you flash to the TMB U firmware, you will not get this feature back. RCS is only supported by Google Messages and iMessage currently.
If you are on the U1 firmware. That is the best firmware you can be on. It adapts to whatever US carrier's SIM is inserted in the device. The only thing you don't get is, the magenta bootscreen.
Flashing devices can brick them if you don't do it correctly, have all of the correct drivers, firmware, etc. Although I have flashed many Samsung devices going all of the way back to the Galaxy Nexus. I would not recommend doing so I less you absolutely need to. There are a lot of little things that are easy to overlook and a system not properly configured could disconnect the device during flashing, bricking it.
Well that's a bummer. I suppose that also explains why on my S10e the messages app has been pushing Google messages on me so hard lately, they knew that very shortly Samsung messages would be dumbed down. Welp. I appreciate the help.
