What is causing my wide variance in SINR for both LTE and 5G
I am seeing wide variances in my cell metrics. Is that normal or do I have issues with interference in my house?
There can be a lot of things that can cause interference, including WiF, microwaves, and many other things, like thick walls, double and triple glazed windows, etc. If your signal is good and stable outside of the home. It's probably something to do with or inside of the home.

I agree with @syaoran .
Typically, of your device is sitting one location it should stay somewhat consistent. Items like time of of day congestion, sun vs. fog, leaves on trees will make you SINR vary. Add into that indoors vs outdoors, as mentioned above.
Tmobile home internet is quite sensitive to location and even direction. During peak hours, n41 sinr can be as poor as 8. Other times, as good as 21. More traffic, the worse the sinr will be.
